A Roman chef brings his seafood skills to London

Massimo Riccioli is chef and owner of La Rosetta in Rome, and is about to open Massimo's Restaurant & Oyster Bar in London's five-star Corinthia hotel. He is famous for his use of seafood and likes to use the entire fish -- for example, using monkfish liver and stomach in his recipes.
