Lynn Hoffman is on a mission to teach culinary students the flavorful benefits of cooking with beer and how to determine proper beer-food pairings. "In a few years, we'll be talking about beer in the same volume and tone we use to talk about wine ... I want these [culinary students] to be completely prepared for that world," he says.
