How to pull restaurant patrons out of the past

Chris and Tessa Dagger had no trouble attracting guests to their first coffee shop, Cakettes Coffee Shop and Bakery, but it turned out many of the patrons were looking for the full meals that the diner that used to be there served rather than the coffee, pastries and other light treats the new owners were selling. Despite a remodel, many customers had a hard time letting go of the past, Chris Dagger said. When it came time to open a second location, the pair avoided a similar problem by opening in a former coffee shop spot where patrons knew what to expect.
