Pasta trends shift along with changing tastes

Pasta's appeal as a familiar comfort food and an affordable staple during tight economic times is shifting as health-conscious consumers and adventurous foodies fuel noodle innovation in restaurants and at supermarkets. Retail pasta sales dipped last year after rising each year during the recession, according to Euromonitor, and customers at Noodles & Company who just a few years ago would have picked simple dishes have grown much more adventurous, said Erin Murphy, the restaurant chain's senior communications manager.
