Scientists Tinker With Tomato Ripening Gene

Researchers say they have turned off a tomato's ripening gene, which could lead to fresher-tasting, longer-lasting produce. The discovery also could increase the health benefits of tomatoes, since vine-ripened produce have higher levels of the antioxidant lycopene. The discovery also may apply to other produce, researchers say.
