Research suggests adding fish protein to functional foods

Protein extracted from inexpensive fish could be a way to introduce omega-3 fatty acids into functional foods, according to a study in LWT -- Food Science and Technology. West Virginia University researchers said the method would use the protein in creation of food products, reducing the need for supplements.
