Darden banks on strong luxury market with Eddie V's

Some analysts scratched their heads over Darden Restaurants' $59 million purchase of the eight-unit Eddie V's Prime Seafood chain last year, but the company is banking on consumers' growing demand for healthier dining options and continued strong spending by affluent consumers to drive growth. Darden plans to open one or two new Eddie V's restaurants next year and anticipates that the chain could eventually reach 100 units.
