Expert: Natural emulsifiers need to improve

Ingredients with natural emulsifying characteristics are not as effective as they could be, says Wayne Morley of Leatherhead Food Research. "Emulsifiers are really important ingredients that allow you to form the emulsion but also in order to stabilize the emulsion. But I think with regards to natural emulsifiers, there is a fairly limited selection available," he says.
