Omega-3-rich foods could be developed from fish protein

Isolated fish proteins could help include omega-3 polyunsaturated fats within foods, according to a study. Functional foods that included fish protein were "nutritionally enhanced with omega-3 PUFAs, had reduced sodium and increased potassium; while the [color] and texture properties were good and gelation properties were improved," researchers said.
