Finding Moroccan heat in Paris

After nights eating couscous at Moroccan restaurants dotting Paris' streets and making weekly visits to the North African farmers market, chef Ellise Pierce knew she had to try the spicy, savory cuisine in her own kitchen. Using fresh vegetables, spices and Morocco's signature cilantro, Pierce creates her own version of roasted eggplant and tomato salad.
