Study sees antioxidant benefits in Fibrex

Researchers from Serbia say Nordic Sugar's Fibrex, derived from sugar beets, improves the antioxidant benefits and shelf life of cookies when used in place of wheat flour. A Nordic Sugar official said the company would work with bakery customers to determine how much Fibrex to use in products to generate the antioxidant benefit.
