Study: Sugar ester could be a food-grade surfactant

U.S. researchers suggest that a natural sugar ester may be used as a food-grade surfactant. The researchers found that the nontoxic sugar ester sucrose monopalmitate could potentially be used in the production of colloidal dispersions with natural-flavor oils. The findings could affect food and beverage makers.
