Training your workers in 5 minutes a day

Foodservice management company Compass Group has replaced lengthy training sessions with 24 5-minute sessions that keep workers engaged and hammer home the key points on a variety of food-safety topics, manager Bryan Langellier told attendees at the three-day Food Safety Summit this week. "We learned some years ago, through trial and error, that [hour-long] food-handler training classes do not work."
