Vegetarianism is no longer all-or-nothing lifestyle

More Americans are choosing vegetarian meals without changing their entire lifestyle as evidenced by declining meat sales, a dramatic increase in farmers markets and the successful "Meatless Mondays" campaign. "When you come from a very meat and potatoes diet, it’s hard to imagine adapting those dishes," said cookbook author Clotilde Dusoulier. "You just feel like you’re removing meat. If you focus on natively vegetarian dishes, those are meant to be meat-free, so they’re perfect without a meat component."
