Chefs explain the evolution of the izakaya trend

Izakaya is a Japanese word that literally means "staying at the sake shop," but has evolved to encompass all manner of casual eateries in Japan and a number of new Japanese restaurants in the U.S., say San Francisco chefs Hiro Sone of Ame and Mari Takahashi of Nombe. Izakayas in the U.S. typically boast creative menus, small plates and lighter fare.
