Blumenthal is working to improve hospital food

Chef and restaurateur Heston Blumenthal is working with a team of scientists on a three-year project to boost the appeal of food served to the elderly in hospitals by adding umami to enhance flavor. As people age, their tasting abilities decline, but "mealtimes should be something to be celebrated in hospital," said Blumenthal.
