Restaurant franchises react as sandwich category changes

More sandwiches are being consumed at restaurants rather than at home, and franchises such as McDonald's are aiming to keep up with fast-growing sandwich-focused chains such as Subway and Firehouse Subs. The key to the trend is a fresh-food message that appeals to millennials. "Subway was just another chain until it started marketing [its food] as healthy," food consultant Joel Cohen said.
