Baking a perfect batch of cookies requires consistency with both the ingredients and equipment used, writes Theresa Marquez, CIA graduate and personal chef. Always use the same baking sheets as the way each sheet conducts heat varies and stick with the same brand of butter -- each label has a different water-to-butterfat ratio and can influence the density of the dough.
