Summer is the season of cooking over an open fire so follow these five simple steps to grilling the perfect steak in the great outdoors, writes Josh Ozersky. Start with a cold cut of meat so the center remains red and juicy while cooking, throw a handful of wood chips in the fire to create a nice smoky flavor, and slather the finished meat with butter and herbs before serving.
