Unlike independent restaurateurs, franchisees must largely conform to a concept that's geared toward providing guests with the same experience in each restaurant, but some operators are finding success by letting loose a small part of their inner mavericks. For one Jamba Juice franchisee that meant creating a food menu to replace the $5 fruit smoothies that his customers in the Bahamas weren't buying.
