Dairy industry expands international flavor profiles

Consumers are increasingly looking to dairy products as a way to indulge, and dairy companies are experimenting with more complex flavors and new textures to meet those demands. "With consumers willing to be more adventurous in their food selections and the growing demand for ethnic authenticity, there is a trend emerging for exotic tastes from abroad," Sensient Flavors' Azeem Mateen said. The next trend in dairy flavors, across both sweet and savory profiles, may be Morroccan spices, according to Fona International's Becky Wagner.
