Consumers moving to gluten-free products

An increasing number of patients diagnosed with celiac disease as well as many consumers' belief that gluten might be responsible other physical ailments has created a boom market for gluten-free products. Research is unclear whether gluten is responsible for ailments from anxiety and depression to infertility, but some patients report feeling better once they've cut gluten from their diets.
