Fennel repairs its reputation

More people are willing to try dishes with fennel as the green becomes more well-known in kitchens and supermarkets. "I think people are more experimental," says a Montreal chef. "Think about it. Not that long ago, arugula was a specialty item." Recipes include Fennel and orange salad, Fennel and apple salad with juniper and Braised fennel with meyer lemon and Parmesan.
