Gluten-free meals take over Chicago menu

Dominique Tougne of Chicago hopes more chefs will consider food allergies when preparing meals. He is hosting a gluten-free night at his Bistro 110 restaurant, featuring dishes such as a dough-less quiche and gluten-free tagliatelle with ragout of mussel, clam, shrimp and tarragon.
