Tableside service adds a dash of entertainment

Family restaurants, chains and fine-dining establishments are all embracing tableside service, which can involve the tossing of a salad, the shaking of a cocktail or the assembly of a flaming dessert. "Our customers know we do everything fresh, but they love to see it in front of their eyes," said Fernando Vincenti of Cafe Roberto in Philadelphia, where fish is deboned and presented tableside.
