Creative custard-based desserts

Many chefs cater to diners' preference for a light treat after a rich meal by developing delicious custard-based desserts. Executive chef Evan Treadwell of Lido Restaurant in Pismo Beach, Calif., works with Pastry Chef Benji Puga to create such delights as "Mint-chocolate Pot de Crème" and "Ginger-lavender Crème Brûlée," while executive pastry chef Alejandro Luna at The Langham Hotel in Boston offers a "Chocolate-orange Crème Caramel" that contains chocolate instead of sugar.
