The owners of La Riviera Trattoria in New Jersey began developing a gluten-free menu in 2009 after their daughter was diagnosed with celiac disease. Independent local restaurants and chains including P.F. Chang's and Uno Chicago Grill have been following suit amid a growing number of requests from consumers following a gluten-free diet.
