Mo. district gets creative to encourage healthy eating

Rita Beebe, a Missouri school district's foodservice director, has been paying close attention to what foods students like -- and what they don't -- so school nutrition professionals avoid feeding the trash cans. As the district works to implement new, healthier meal requirements next year, Beebe said she is taking steps to encourage students to eat healthier foods, such as slicing applies instead of serving them whole, and preparing whole-grain pasta that is still white or covering the colored noodles with sauce.
