Caviar finds a younger fan base

Young chefs are introducing caviar to a new generation by adding the delicacy to familiar foods. A Hyatt Regency in Maryland serves caviar spring rolls, and a New York City restaurant has added caviar tuna pizza to its menu. The chefs are mostly using domestic caviar since recent restrictions have made it harder to source imported varieties.
