DuPont sees probiotic opportunities in chocolate

Chocolate provides an excellent delivery system for probiotics, said DuPont Nutrition & Health Marketing Vice President Scott Bush. "We want to put probiotics in a system where moisture is minimized, and chocolate is a low-moisture system so it's quite amenable as a probiotic delivery vehicle," he said.
