Omni boosts cocktail sales by sticking to classic drinks

Omni Hotels & Resorts overhauled its cocktail menu to get rid of signature drinks in favor of classic drinks such as a gin and tonic. The simplified menu boosted cocktail sales by 20%. "When you're developing your signature cocktails, you have to know who your customers are, and who your servers are," said David Morgan, vice president of the hotel chain.
