Research: Dairy products counter antioxidant bitterness

The bitter taste and astringent quality of certain antioxidant extracts are masked when combined with milk and sucrose, a study found. "Sweetened dairy products could be interesting carriers for the development of functional foods containing polyphenolic-rich antioxidant extracts," the researchers wrote.
