London chef draws inspiration from diverse sources

Cookbook author and chef Yotam Ottolenghi recently added the London restaurant Nopi to the four delis he already owns and operates. "In my kitchens 90% percent of the staff are from outside the U.K.," he said. "With this diversity there are so many different food traditions, and this provides a rich source of ideas for recipes."
