Highly praised Bordeaux, once the standard for fine wines, appears to be falling out of fashion as younger wine-drinkers and sommeliers turn their attention to Burgundy. "I don't know any young sommelier who I've encountered in the last 15 years who is a Bordeaux hound," said Paul Grieco, who owns a restaurant and two wine bars in Manhattan.
