Cata, a Spanish restaurant in New York City, is changing customers' perceptions of gin and tonics with 25 different varieties -- a cocktail list that continues to grow as bartenders dream up new ways to enjoy the old-school cocktail. Instead of topping drinks with a freshly squeezed lime, bartenders add other fruits such as grapefruit and kumquats along with spices to pull out the botanical flavors and aromas in well-crafted gin.
