Chef explains how to cook vegetables

Chef David Kamen from The Culinary Institute of America, one of the contributors to a new CIA cookbook, "Vegetables: Recipes and Techniques From the World's Premier Culinary College," thinks that Americans don't eat enough vegetables because veggies rarely are prepared correctly in the home. Preparation, selection and storage methods are detailed in the book, which also includes this recipe for mu shu vegetables.
