Traci Des Jardins is a model for women with aspirations in the male-dominated restaurant world, according to this article. Des Jardins operates Mijita and Bon Appetit's Acme Chophouse, although getting there wasn't easy, she says. Her own training came in "an atmosphere of militarism, aggression, abuse, yelling," she says. "Kitchens are one of the last bastions of really bad behavior, like sports."
