Potato water to help PepsiCo plants go off-grid

PepsiCo plans to reclaim the water that evaporates from cooking potatoes at four of its U.K.-based potato chip plants in order to take itself completely off the water grid. The plant uses 385,808 tons of potatoes each year, and officials say that since 80% of a potato is water, it should be possible for the plant to be completely self-sustaining.
