Berge Simonian studied engineering for three years, but it was his on-the-job training in restaurants and his parents' deli that taught him the lessons and skills he needed to launch Salata. The Houston-based fast-casual salad bar concept has grown to 19 units in two states since the first food-court location opened in 2005, and the chain and its franchisees expect to open about 50 more by the end of 2015.
