Refined salads become a staple on New Orleans menus

New Orleans chefs are adding sophisticated salads to the menu after realizing customers are more than willing to pull out their wallets for a plate of out-of-the-box greens. Chef Phillip Lopez's "living terrarium" salad features foie gras, flowers and myriad other ingredients finished off with a cloud of liquid nitrogen.
