Darden, Silver Diner say small changes make menus healthier

Restaurant chains large and small can tweak their menus to cater to health-minded consumers, said panelists in the "Nutrition Trends: How Can Your Restaurant Capitalize?" session at the recent NRA Show in Chicago. Give customers choices in each course that let them decide whether to indulge or count calories, said Cheryl Dolven, director of health and wellness for Darden restaurants.
