Is meat-free catching on in some school cafeterias?

A decision in San Diego, Calif., to stop serving meat in elementary-school cafeterias on Mondays has drawn criticism from meat producers, who say their product -- when consumed in normal amounts -- is healthy. However, the meat-free trend already has caught on in San Diego and Los Angeles as well at a New York school that recently adopted an all-vegetarian menu.
