Not only have chefs given up wearing the tall hats that identify them, but kitchen staffs seem to be going bareheaded most of the time, blogs critic Michael Bauer. "One of the first high profile chefs to dump the toque was Wolfgang Puck in the early 1980s, or at least that was the first time I saw chefs in baseball caps at Spago in Los Angeles."
