Simple changes may help students make healthier food choices

Simple low-cost changes to the way cafeteria food is presented and sold helped steer students to make healthier choices, researchers found. Better lighting and more attractive displays encouraged students to buy more fruit, moving the salad bar closer to the checkout increased revenue, and restricting purchases of snack-food items to cash-only helped discourage those purchases.
