Science key to limiting produce safety recalls

Researchers say the focus on food safety linked to fresh produce should shift to prevention rather than on recalls, as most tainted product has already been consumed by the time a recall is issued. Scientists are now learning how pathogens such as E.coli and salmonella grow on produce, and how their survival can be limited by manipulating environmental conditions.
