Mediterranean diet spurs growth of fast-casual franchises

A growing awareness of the health benefits of a Mediterranean-style diet that's heavy on olive oil, whole grains, vegetables and lean proteins has spurred the growth of fast-casual franchises including Garbanzo Mediterranean Grill. The chain launched in 2008 and will end the year with 37 units in six states, said founder Alon Mor.
