Chef brings passion and pain to his work

Che Stedman, a CIA grad who is executive chef and co-owner of Moonstone Bistro in Redding, Calif., says he uses fresh and local items and avoids ingredients he can't pronounce. When asked what makes gourmet food gourmet, he said: "Love. Respect. Passion. Pain. Sweat. Tears. Persistence."
