Mezcal cocktails shake things up in California bars

California bars are shaking up cocktails using small batch, herb-infused mezcal, a smoky version of tequila, thanks in part to mixologist Ronaldo Colli, who spread word of the unique, dynamic spirit throughout the state. "Sipping mezcal is an experience that people should take seriously," Colli said. "But that doesn’t mean you can’t have fun with it -- and in the case of some of my favorite cocktails, it’s playing up the earthiness and peppery notes of the mezcal with herbs like thyme."
