Aldea owner and chef George Mendes was a restaurant employee for 15 years before he opened his own Portuguese eatery in New York a year ago. Shifting from being "just a cook" to running the entire place was an adjustment, Mendes tells Eater in this interview, and one year in, he's still working on his customer relations skills.
