Toronto restaurateurs bet on their secret sauces

Hemant Bhagwani and Derek Valleau started serving upscale Indian cuisine at Toronto's Amaya in 2007, then added another sit-down location and five takeouts. Franchising is in the works -- "no one has touched Indian" as a franchise, Bhagwani said -- but bottling their sauces for retail sale may prove to be the toughest brand extension of all.
